Cucumber Sandwiches

White bread slices

2 medium cucumbers

4 oz. Cream Cheese, room temperature

2 tablespoons Mayonnaise

Salt

Fresh Dill Sprigs

Pimento pieces

Method: Thinly slice cucumbers (peeled or un-peeled). Layer in a bowl with a sprinkling of salt on top of each layer. Cover with a plate over the cucumbers to weight it. Place in refrigerator for about an hour. In a mixer, combine the softened cream cheese and mayonnaise, blend until smooth. Drain excess water from cucumber bowl and lightly dry cucumbers with a paper towel. Trim crusts from bread and cut with a round cookie cutter. Spread the cream cheese mixture over the top of the rounds, place a layer of cucumber slices on top of each round. Place a small amount of cream cheese mixture on top of cucumbers to hold a sprig of fresh dill and a small piece of pimento, for added color.
